Things have been super crazy at our house. I’m trying to get back into a groove and I cannot wait for school to start! I am counting down the days. One of the best ways to celebrate my getting back on track is a Meal Plan!
I get very excited about these small accomplishments. This time of the year can be very hectic for some of us. So any plan, preparation, and subsequent accomplishment is always a good self-esteem booster. I have made some changes to the way I do my meal plans, though.
1. I start my week on Sunday now. Since, I have started to use coupons and shop sales more, I find it easier to start my meal plans Sundays instead of Mondays.
2. I am trying to incorporate more German and Southern dishes. Lately, I have really been missing my ‘homes’ (Germany and Texas). So one of the ways to deal with this homesickness is cooking! If I happen to make a German dish, I will include the German name for that dish and then a translation. This way y’all will know what I’m talking about. 🙂
So here is what we will have for dinner this week:
Sunday: Apfel-Pfannkuchen — Apple Pancakes
Monday: Kartoffelpuffer — Potato Pancakes with veggies and Bacon slices
Tuesday: Homemade Pizza
Wednesday: Ham and Bacon stuffed Chicken with veggies
Thursday: Sloppy Joe
Friday: Enchiladas with Rice and homemade refried beans
Saturday: Slow Cooker Beef Tips with rice
