Chicken Nuggets Recipe

So last week I made Chicken Nuggets Elijah absolutely devoured and I figured I would share the recipe with y’all! It is super easy and all of the ingredients are Staples in our household. It makes this such a great alternative for those days I need to improvise and find something Elijah will eat!

Chicken Nuggets Recipe

What you’ll need:

  • Chicken (I use about 2 breasts for our family of 3)
  • 1 Cup Cornstarch
  • 1/2 Cup Flour
  • 2 Eggs
  • about 1/2 cup Milk
  • 1 teaspoon Paprika
  • 2 teaspoons(-ish) Garlic Salt (this, I think, depends on your liking to Garlic Salt)
  • a pinch of Salt and Pepper
  • cooking oil (I used just plain ol’ Vegetable Oil; probably not healthiest option but oh well)
  • (my beloved) Cast Iron Skillet

Are you ready for this? It may seem like a bit of work, but it really is super simple! And you can even choose to add Buffalo Sauce (like I did in the picture above 🙂 ), BBQ Sauce, or whatever you fancy! Anyways, well let’s get started:

1. Whisk

Whisk together the 2 eggs and milk in one bowl. Combine the Cornstarch, Flour, Paprika, Garlic Salt, and Salt and Pepper in a separate bowl and you’ll get this:

2. Cut

Cut your Chicken into cubes. I cut them a little bigger this time, just because I really didn’t feel like making them any smaller. 🙂

step 2

3. Fill

Fill the Cast Iron (or whatever you choose to use, I am just extremely biased toward my Cast Irons) with enough Oil for the Chicken to be covered by the Oil when cooking. Slowly heat the Oil. I set the heat to medium on my Gas stove, and that seems to work just fine for me. (Still keep an eye on it though!)

4. Dunk

Dunk the Chicken pieces into the Milk/Egg mixture, then into the Cornstarch/Flour/Spice mixture and if you feel adventurous, go ahead and do it again. Warning: My fingers ALWAYS get super sticky, but that’s just fine because these nuggets are kinda totally worth it.

5. Fry

Now to the fun part: I always seem to burn myself somewhere in this process! Anyways, gently place the Chicken in the Oil and let them fry away till their golden brown.

6. Drip

Take them out and lay them on a plate with a Paper Towel to let the oil drip off.

7. Sauce

This is when I get to add some yummy sauces to our batch, while Elijah prefers his just plain with massive amounts of Ketchup. All I did was heat up about half a bottle of Buffalo Wing Sauce, added about 2 Tablespoons of Spread and nuked in the Microwave for a minute-ish.

Stir, then place the Chicken in the sauce, stir some more until they are all coated…and TADAAAA!!!!! You’ve got yourself some pretty awesome Buffalo Chicken Nuggets!

8. Add sides

Make whatever side you want with it! We just had some Ranch Dressing, roasted Asparagus and some fruit Elijah helped me cut with this.

So, how easy does this look? Pretty simple, right? Let me know what you think and if you have any recipe ideas you’d like to share please send them this way, I always look forward to hearing from y’all.
